In a frying pan on high, heat oil to smoking point, and quickly sauté venison, about 3–4 minutes. Remove from pan. Add vegetables to pan and sauté for 2 minutes. Add soy sauce and demi-glace, and bring to a simmer for about 4 minutes. Return venison to pan and mix thoroughly.

VENISON TOURTIÈRE

A traditional French-Canadian Christmas or New Year’s Eve holiday meal, tourtière is usually made with finely diced pork or veal. My version uses venison, but you can also use buffalo. The bacon is traditional and gives it a great smoky flavor, but using canola oil to brown the meat is a healthier option.
