LEMONGRASS-CHOCOLATE PURÉE

4 ounces semi-sweet chocolate, finely chopped

½ cup heavy cream

1 fresh lemongrass stalk, coarsely chopped

LEMONGRASS SYRUP

2 fresh lemongrass stalks, finely chopped

6 ounces water

1 teaspoon honey

ZEN MOCHA

½ cup lemongrass-chocolate purée

¾ cup lemongrass syrup

1 lemon, sliced very thin

6 ounces espresso

6 fresh lemongrass stalks, clean and trimmed, for garnish

To make the lemongrass-chocolate purée, place the chocolate in a small bowl. In a small saucepan over medium heat, bring the cream and lemongrass to a boil. Strain the mixture directly onto the chocolate. Discard the lemongrass. Gently whisk the chocolate and cream until smooth. Set aside to cool.

To make the lemongrass syrup, in a small saucepan, combine the lemongrass, water, and honey and bring to a boil. Reduce the heat and bring the mixture to a simmer. Simmer for 4 minutes. Strain and set aside to cool.

Combine lemongrass purée, lemongrass syrup, lemon slices, and espresso in a chilled cocktail shaker. Fill the shaker with ice cubes and shake well. Fill 6 glasses with ice cubes. Strain the mixture into the chilled glasses over the ice cubes. Garnish with fresh lemongrass stalks as stir sticks.
