3 tablespoons plus 1 teaspoon (50 g) brown sugar
2½ tablespoons (50 g) honey
2 star anise pods
2 cinnamon sticks
Grated zest of 1 orange
1 (1½-pound, or about 700 g) turkey breast, butterflied (do not cut all the way through)
Flaky sea salt
Freshly cracked black pepper
Handful of fresh baby spinach
5â ounces (150 g) smoked cheese, about 1 ounce (30 g) grated, the rest cut into 4 pieces
1 tablespoon (15 ml) olive oil
¾ cup plus 1 tablespoon plus 1 teaspoon (200 ml) white wine
Chopped fresh parsley for garnish
DIRECTIONS
Prepare your fire for medium heat.
In a large cast-iron skillet over medium heat, combine the cranberries and orange juice and bring to a boil. Stir in the brown sugar, honey, star anise, cinnamon sticks, and orange zest. Simmer until the cranberries have broken down and the sauce is thick and jammy, 20 to 25 minutes.
