Verde Apple Refreshing Smoothie

Servings: 3

Cooking Times: 10 minutes

Ingredients

• 3/4 cup of almond milk

• 1 green apple cored and sliced

• 1 small carrot sliced

• 1 handful of fresh spinach leaves

• 2 Tbsp of sugar or sweetener

• 1 Tbsp of oats

• 1 tsp of cinnamon

Instructions

1. Add all ingredients in a high-speed blender and blend for 45 seconds or until smooth.

2. Drink immediately or keep refrigerated in a glass jar.

Green Beans with Tomato – Cinnamon Lunch

Servings: 6

Cooking Time: 35 minutes

Ingredients

• 3 Tbs olive oil

• 1 onion chopped

• 2 lb fresh green beans, cleaned and cut diagonally in half

• 2 tomatoes, cored, peeled, and quartered

• 1 tsp ground red paprika

• 1/2 cup of water

• 1/2 tsp of cinnamon

• 1/2 tsp of cumin

• salt and black pepper, freshly ground

Instructions

1. Heat the oil in a large pot over medium-high heat.

2. Sauté chopped onion with the salt and pepper for 3 to 4 minutes or until soft.

3. Add ground paprika and tomatoes; stir and sauté for 4 to 5 minutes.

4. Add the green beans, pour water and stir.

5. Cook covered for 15 to 18 minutes or until completely soft.

6. Season the cinnamon, salt and pepper, stir and serve.
