Ingredients:

2 slabs of baby back ribs (2 lbs. each)

1/2 cup brown sugar

1/4 cup smoked paprika

1-1/2 tablespoon kosher salt

1 tablespoon ground black pepper

2 teaspoons garlic powder

2 teaspoons onion powder

1/2 teaspoon cayenne pepper or chilli powder

water for smoker

hickory or apple wood chips

Method:

Remove the membrane and pat the dry the ribs

Mix all the dry seasoning and rub it over the ribs. Let it rest for 30 minutes.

Preheat the smoker to 225 degrees F. Add water to the removable pan.

Add wood chips to the side drawer of the smoker.

Place the seasoned ribs in the smoker with their meat side up

Let it smoke for 3 hours.

Transfer the rack of ribs over 2 sheets of foil and pour a basting liquid of your choice.

Wrap the foil completely around the rack.

Return the ribs to the smoker and cook for another 1 to 1.5 hours until its internal temperature reaches to 160 degrees.

Serve warm.
