Smoked Game Hens in Masterbuilt Smoker

Prep time: 15 minutes

Servings: 8

Ingredients:

4 Game Hens

¼ c. Olive oil

1 Orange

4 tsps. Sea salt

2 tsps. Black pepper

2 tsps. Dried thyme

Fruitwood chips

Water

Butcher’s twine

Preparations:

Clean the hens and rinse them with water. After rinsing them with water, use a paper towel to dry them.

After that, allow the hens to stay at room temperature; you can leave them for maximum 30-minutes.

While the chicken is resting, prepare the seasoning. Set the Masterbuilt smoker to 250 degrees F. For the smoky flavors, add Fruitwood chips to chip tray and add water to the water bowl. It should be filled up to halfway.

Now, as you have already prepared the seasoning, combine it with EVOO and rub in the cavity and on the outside surface of each hen.

After rubbing the seasoning, stuff each hen with oranges, 3 quarters and tie the legs with twine.

Place the hens on the smoker rack and nicely tuck their wings under their trunk. Smoke them for 2 and a half hours and check for internal temperature. It should be 165 degrees F.

If required keep adding the woodchips for continuous smoking.

Once done, remove hens and let them rest for 20 minutes.

Discard the organs and cut them into halves.

Serve them with side dishes of your choice.
