Combine, in a glass bowl, sugar, salt and flour. Cut in butter with a fork or pastry cutter until coarse crumbs form. Mix in cheese, and then set aside. Combine apples, water and lemon juice; toss lightly. Spoon apples into a greased 8-inch square baking dish. Sprinkle cheese mixture over apples and pat down gently. Bake at 350 degrees F. for 40 minutes. Serves 6-8, and can be served with a meal or used as a dessert, topped with vanilla ice cream or vanilla yogurt.
