PINK GRAPEFRUIT + TARRAGON

Tarragon is something that would normally be associated with savoury food rather than sweet, but I think it goes really well with the bitterness of pink grapefruit.

Serves 2 (serve immediately)

100g/3½oz/½ cup granulated sugar

3 sprigs of tarragon

400ml/14fl oz/1¾ cups pink grapefruit juice

1 Place the sugar in a saucepan and pour in 120ml/4fl oz/½ cup of water. Bring to the boil, stirring until the sugar has dissolved. Add the tarragon until wilted. Set aside to cool.

2 When completely cool, strain to remove the herb. Mix the pink grapefruit juice and tarragon syrup in a freezable, lidded container, cover and put in the freezer.

3 Freeze for 2 hours, then, with a fork, draw the ice that has formed on the edges into the centre. Put back in the freezer.

4 Repeat 3–4 times, every 30 minutes or so, until all the mixture is formed of ice crystals. Serve with fresh tarragon.
