Creamy Cauliflower & Butternut Squash Soup

Prep time: 5 minutes, cook time: 2 hours; Serves 6

Ingredients:

1 onion, diced

1-2 tsp oil for sautéing

2-3 cloves garlic, minced

7 cup cauliflower florets

2 cup butternut squash, cubed

2 cup sodium-free vegetable or chicken broth (see recipe)

1 tsp paprika

1 tsp dried thyme

½ tsp red pepper flakes

¼ tsp low sodium salt

½ cup half and half

Instructions:

1. Sauté onion and garlic in a heavy-based skillet.

2. Place in a 5 to 6-quart with all other ingredients except the half and half.

3. Cook on HIGH for 4 hours.

4. Puree the soup in a blender.

5. Stir in the half and half, heat through and serve.
