METHOD

Use a large saucepan to heat the butter, add the garlic and saute gently.

Add sliced leeks and let it cook until soft while stirring throughout.

Remove the pan from heat.

Add the cream cheese and pepper then stir.

Serve.

CAULIFLOWER RICE

This is an incredibly low carbohydrate lunch which is high in fiber and vitamins. It’s a good replacement for the normal rice

TIME 15minutes Serving 6

INGREDIENTS

0.5 Cauliflower, cut into small pieces to fit in a blender

1cup coconut cream

0.25cup shredded or desiccated coconut, unsweetened

1tbs cilantro or coriander, fresh or dried

Salt to taste
