1. Heat the margarine and oil in a large saucepan and fry the onion for 3-4 minutes until soft but not browned.

2. Stir in the parsnips and rosemary, cover and cook for 4-5 minutes. Add the water and bay leaf, bring to the boil, cover and simmer for 25-30 minutes.

3. Remove the bay leaf, and stir in the cashew nuts, ground sesame seeds, soya milk and apple juice.

4. Liquidize in a blender or food processor until smooth and creamy (add more apple juice or water if a thinner consistency is desired).

5. To serve, reheat stirring occasionally. Do not allow to boil.

6. Season to taste and serve garnished with the whole sesame seeds.
