220 g (7¾ oz/1 cup) medium grain brown rice, rinsed and drained (see note )

280 g (10 oz/2 cups) fresh or frozen peas

1 tablespoon olive oil

1 brown onion, finely chopped

2 garlic cloves, chopped

1.13 litres (39 fl oz/4½ cups) chicken stock (homemade or reduced salt)

45 g (1¾ oz/½ cup) parmesan cheese, coarsely grated

80 g (2¾ oz) goat’s cheese, optional

1 small handful of flat-leaf (Italian) parsley or mint, finely chopped

freshly ground black pepper
