Perfect coddling

1 Using a slotted spoon, gently lower the whole eggs into a pan of simmering water, then take the pan off the heat.

2 Leave the eggs to stand in the water for 4-5 minutes, where they will cook gently with the residual heat of the water.

Perfect boiled egg

There are two ways to boil an egg: starting in boiling water or starting in cold water. Both work well as long as you follow certain rules

The egg must be at room temperature

For both methods, cover the eggs with water, plus 2.5cm (1in) or so extra

If starting in boiling water, use an 'egg pick', if you like, to piere the broad end of the shell. This allows air in the pocket at the base of the egg to escape and avoids cracking

Gently lower in the eggs using a long spoon to avoid cracking them

Cook at a simmer rather than a rolling boil
