Savory Salmon Steaks

One of the classiest, fastest fish dishes on the planet. These are great summer fare, because you don’t have to turn on the oven, and they are terrific cold.

Makes 4 servings

Four 8- to 10-ounce salmon steaks

¼ teaspoon salt

⅛ teaspoon freshly ground black pepper

1 tablespoon olive oil

2 garlic cloves, minced

¼ cup dry white wine, such as Sauvignon Blanc

1 tablespoon fresh lemon juice

2 tablespoons chopped fresh basil or oregano, or a combination
