Garlic Toast

Broil one side of 8 (½-inch-thick) slices French bread until golden. Turn over. In small bowl, combine ½ teaspoon salt with 2 minced garlic cloves; mash until a paste forms. Stir in 2 tablespoons each butter and olive oil and 1 pinch of lemon pepper. Spread on toasts and broil until crisp.

Tex-Mex Chicken Spaghetti

Make recipe as directed, except add 1–2 minced jalapeño peppers to the onion mixture as it cooks. Omit basil; add 1 teaspoon dried oregano leaves. Omit feta cheese; use ½ cup grated Cotija or Parmesan cheese. Garnish with sliced avocados and sour cream.
