Ingredients

● 1/2-1 cup blueberries, fresh

● 4 to 5 tablespoon coconut flour sifted

● 1/4 to 1 cup heavy cream

● 1 to 2tsp lemon zest, grated finely

● 1/3-1 cup erythritol

● 2 to 3 eggs

Directions

1 Assemble all the ingredients at one place.

2 Preheat oven to 340F and line eight-hole muffin tin with the paper cases.

3 Now we can proceed to the next most important step.

4 In a bowl stir the erythritol, eggs & heavy cream until well mixed.

5 Add the coconut flour & then stir until smooth.

6 Let it stand for 8 to 12 minutes or so before adding lemon zest & fresh blueberries.

7 Now carefully stir very gently & then carefully spoon the batter into paper cases.

8 We’re almost there; just one thing remains to be done.

9 Bake, the blueberries for 25-38 minutes or until the inserted toothpick, comes out clean.

10 Now serve after at room temperature.

11 Smell the aroma and serve.
