Strawberry Ice Cream

Preparation Time: 5 minutes

Cooking Time: 2 hours

Servings: 6

Ingredients:

1 cup heavy whipping cream

1/3 cup erythritol

3 large egg yolks

½ tsp vanilla extract

1/8 tsp xanthan gum

1 tbsp vodka

1 cup strawberries, pureed

Directions:

Add cream to a pot and place it over low heat and warm it up.

Stir in 1/3 cup erythritol and mix well to dissolve.

Beat in egg yolks and continue whisking until fluffy.

Stir in vanilla extract and mix well until smooth.

Lastly, add 1/8 tsp xanthan gum and the vodka.

Mix well then transfer the mixture to an ice cream machine and churn as per the machine’s instructions.

Freeze it for 1 hour then add pureed strawberries.

Churn again and freeze for another 1 hour.

Serve.
