1. Place the olive oil, vinegar, and oregano in a jar with a tight-fitting lid. Shake well to combine.
2. In a large bowl, combine the tomato, onion, cucumber, bell pepper, olives, and feta. Pour in the dressing and toss to coat. This can be done a little ahead, and the veggies placed in the refrigerator to marinate in the dressing.
3. Just before serving, toss the spinach into the salad. Optionally top the salad with freshly ground black pepper. Serve.
