Nutty Cookies

Total Prep & Cooking Time: 20 minutes

Makes: 15 Cookies

What you need:

1 cup of unsweetened and flaked coconut

1/2 cup of macadamia nuts—raw

2 T. of melted butter

1/2 cup of raw pecans

1/4 TSP of sea salt

Steps:

In the food processor, combine the pecans, macadamia nuts, and salt and pulsate the ingredients for 3 to 5 minutes on high until batter becomes really smooth.

Use a spatula made of rubber to spoon the batter to a large bowl, stirring in the coconut flakes and butter until fully combined.

Place parchment paper on 2 regular sized baking sheets. Use a cookie scoop or spoon and place approximately 2 TSPs of dough onto the baking sheet for each cookie.

Shape and flatten each cookie by hand to the desired thickness and place in the freezer for them to cool properly.

Take the cookies out in 1 to 2 hours after they have set.
