SERVES 4

175 ml (6 fl oz) good-quality mayonnaise

4 tablespoons double cream, whipped

1½ tablespoons yellow squeezy mustard (or Dijon)

½ tablespoon chopped capers

½ tablespoon chopped chives

½ tablespoon chopped parsley

½ tablespoon chopped pickled gherkins

few drops Worcestershire sauce or some chopped anchovy fillet

salt and freshly ground black pepper

Fold the cream into the mayonnaise, then fold in all the remaining ingredients. Taste and season. Mix all ingredients until well blended.
