Pineapple Cream Chicken

Prep Time: 5 min.

Cooking Time: 15 min.

Number Servings: 4

Ingredients:

1/2 cup full-fat coconut cream

1 teaspoon cinnamon

2 pounds chicken thighs, cut into one-inch chunks

1 cup fresh pineapple chunks

1/4 teaspoon salt

3 tablespoons coconut aminos

1/2 chopped green onion to garnish

1 teaspoon arrowroot

1 tablespoon water

Directions:

Take your Instant Pot and open the top lid.

Add all the ingredients except the onions; gently stir.

Close the top lid and seal the pressure valve.

Press “POULTRY” setting with 15 minutes of cooking time and “HIGH” pressure mode.

Press “NPR” function to release the pressure slowly in natural way.

In a small bowl, combine the arrowroot with 1 tablespoon water.

Open the lid, add the arrowroot mix, and combine.

Cook on sauté mode until thicken.

Transfer to serving plates, top with the onions, and serve warm. Enjoy!
