COD WITH SPICED ORANGE MARINADE
PREPARATION TIME 10 minutes, plus 2–3 hours marinating
COOKING TIME 8–10 minutes
SERVES 4
4 cod steaks, 175g/6oz each, 2.5cm/1in thick
chopped fennel herb, for garnish
lime wedges, to serve
SPICED ORANGE MARINADE
4 tbsp orange juice
4 tbsp dry vermouth
4 tbsp hoisin sauce
4 tbsp soy sauce
1 garlic clove, crushed
½ tsp ground cumin
½ tsp Chinese five-spice powder
freshly ground black pepper
Lay the cod in a shallow, non-metallic dish just large enough to hold the steaks.
Make the marinade by mixing all the ingredients together. Pour over the cod, turn the steaks to ensure they are evenly coated, then cover the dish and leave in a cool place for 2–3 hours.
Lift the cod from the marinade (reserve the marinade) and cook on an oiled grill for 4–5 minutes on each side, brushing occasionally with the marinade. Serve garnished with fennel and accompanied by lime wedges.
