Recipe and Procedure Manual

Your Recipe and Procedure Manual will contain all the bakery’s recipes, preparation procedures, handling instructions and ordering specifications. This manual, if properly used, will ensure perfection and consistency every time the product is prepared.

The Recipe and Procedure Manual must be available to the kitchen personnel at all times. Recipes should never be prepared from memory. The employee, without constant reinforcement from the manual, will tend to forget the exact proportions, and may even eventually leave an entire ingredient out of the recipe. For this reason, and to ensure consistency, the Recipe and Procedure Manual should be open and in front of anyone preparing a food product. The pages of this manual should be sealed in plastic to protect them while in the kitchen.

Assembling sandwiches and other freshly prepared food items won’t require an extensive recipe; however, a small laminated card with weights and measures should be posted in prep areas.
