How to Tell When It Is Dry With clean hands, touch the top of the leather in several different places. It should feel like leather and not be soft to the touch.

When the leather is sufficiently dried, you will be able to pull it up, beginning at the edge of the tray.

If it sticks in the center and some of the puree underneath is still moist, return it to the dehydrator for another hour or so.

Vegetable leather dried in a dehydrator is usually done in six to eight hours.

Remove Leather from the Trays While Warm Remove the leather from the tray while it is still warm and roll it up. Cooled vegetable leather does not roll as easily and may crack.

Roll into long rolls. Then cut the long rolls into shorter pieces.
