Carol’s Favorite Hummus

Hummus is an Arabic word for bean spread typically made with garbanzo beans (also called chickpeas). Making hummus is so easy, and so delicious that I cannot believe more people don’t do it.

First, you need to assemble your ingredients. I generally make my hummus with garbanzo or black beans. If you are using dry beans, start the day before.

• Sort and wash your beans.

• Put them in a pot, cover with water, and bring to a boil.

• After boiling for five minutes, turn off the heat and let them sit, covered, for several hours.

• Before going to bed, drain the beans and put them in your crockpot.

• Add enough fresh water to cover the beans and set the pot on low.

• In the morning, they are done.

If you do not want to use dry beans, you can use canned or frozen.
