Sodium is an essential electrolyte, but it is necessary only in moderate amounts. Hunter-gatherer populations, who had exceptional cardiovascular profiles, consumed a fraction of the sodium modern humans do today. Excessive sodium intake directly affects blood pressure, leading to hypertension. Consuming too much sodium causes the kidneys to retain water, also pushing blood pressure up. Because of this, the American Heart Association recommends that the average person limit their sodium intake to less than 2,300 mg per day, and less than 1500 mg per day for those at increased risk of cardiovascular disease. I recommend that most men and women should limit sodium consumption; remember, one teaspoon of table salt has 2,000 mg of sodium.
