1 cup of wild rice

Olive and Rice Casserole

4 cups of water

3 tablespoons cold pressed olive oil 1 bunch of kale, cut up

1 onion or 3 cloves or garlic, chopped 1/2 pound Shitaki mushrooms, sliced

4 cloves garlic, chopped

1 teaspoon parsley

1-1/2 cups brown rice

1 teaspoon oregano

3-1/2 cups water

1 teaspoon basil

2 (6oz dry wt) cans California black olives, chopped 1/2 teaspoon sea salt

1/2 teaspoon sea salt

1/8 teaspoon black pepper

1/4 teaspoon black pepper

Bring water to a boil. Add brown rice and wild rice. 1 teaspoon basil

Cover and simmer for 45 minutes. Begin cooking the rice 1/2 teaspoon parsley
