ROSE WATER COCONUT KEFIR

- SERVES 4 -

Coconut water mixed with kefir is a light, refreshing health tonic brimming with wholesome lactic acid bacteria. It’s perfect for balancing and strengthening the gut. Eighty percent of the body's immune response is in our gut. This tonic requires a bit of prep work because the kefir grains need to be “activated” before they can start producing all those good-for-you bacteria cultures that will make a happy gut. But I promise that it’s well worth your time and patience!

1 quart (1 liter) unsweetened coconut water

4 tbsp kefir grains, activated (follow the instructions on the package if you buy nonactivated grains; they will take 5–7 days to become active)

2 tbsp rose water

1 cinnamon stick, or any flavoring ingredient (optional)

1 sterilized glass jar

1 kitchen towel

1 rubber band

Heat the coconut water to 98.6°F (37°C), or use it at room temperature. Pour the water into a large, sterilized glass jar, and add the activated kefir grains and rose water. You can also add a cinnamon stick or any other preferred flavoring ingredient. Cover the jar tightly with a kitchen towel and secure it with a rubber band. Don't cover the jar with a lid, because fermentation increases the pressure inside the jar. Leave the jar at room temperature for no longer than 24–48 hours. Strain or fish out the kefir grains. Store them according to the instructions on the packaging. Your kefir tonic is now ready to drink. Store in the refrigerator.

FLAVOR SUGGESTIONS:

You can leave out the rose water and flavor your kefir with the following (choose one per quart (liter) of kefir water):

⅖ cup (100 ml) pomegranate juice

⅕ cup (50 ml) lemon juice

SOME INFO ABOUT KEFIR GRAINS Kefir grains aren't actually grains, but really a mixture of yeast and bacteria. If properly looked after, they can be reused several times.

TIP! Metal utensils can be detrimental to the kefir, so it’s best to use a wooden spoon when stirring the tonic.
