Calabasa con Puerco

4 large Pork chops—boned and cubed (about 1½ to 2 lbs.)

2 Zucchini squash—sliced

2 Yellow squash—sliced

1 med. Onion—chopped

2 Garlic cloves—minced

1 Green bell pepper—chopped

¼ c. Cilantro—chopped (unpacked)

2 tsp. Ground cumin

1 tsp. Chili powder

1 tsp. Salt

½ tsp. Black pepper

14½ oz. Whole tomatoes (one can)

2 c. Chicken broth (or substitute bouillon cubes)

1½ tbsp. Vegetable oil

Water if needed

1. To heated vegetable oil, add onion, bell pepper, and pork. Cook until pork is browned.

2. Add garlic, cumin, chili powder, salt, and pepper; continue to cook for about two more minutes, stirring often.

3. Add zucchini and yellow squash. Stir until squash is incorporated.

4. Add whole tomatoes and chicken broth. Add water (if needed) to cover squash. Bring to a boil.

5. Reduce heat. Sprinkle cilantro over stew and simmer until squash is tender (about twenty minutes). Serve and enjoy.
