Beef Burgundy

Also known as Boeuf Bourguignon, this French classic has become an American favorite.

PREP: ABOUT 1 HOUR BAKE: ABOUT 1 HOUR 30 MINUTES

MAKES 10 MAIN-DISH SERVINGS

2 slices bacon, cut into ½-inch pieces

3 pounds boneless beef chuck, trimmed and cut into 1½-inch pieces

5 medium carrots, peeled and cut into ½-inch pieces

3 garlic cloves, crushed with side of chef’s knife

1 large onion (12 ounces), cut into 1-inch pieces

2 tablespoons all-purpose flour

2 tablespoons tomato paste

1 teaspoon salt

½ teaspoon coarsely ground pepper

2 cups dry red wine

4 sprigs thyme

1 package (12 ounces) mushrooms, trimmed and each cut into quarters if large

½ cup loosely packed fresh parsley, chopped
