4 tsp whole mixed peppercorns

4 fresh mackerel, gutted, about 250g (9oz) each

1 tbsp sunflower oil

200ml (7fl oz) crème fraîche

lemon wedges to garnish

asparagus and sugarsnap peas to serve

1. Lightly crush 2 tsp peppercorns using a pestle and mortar. Sprinkle one side of each mackerel with half the crushed peppercorns.
