Chocolate Chip Blondies

Servings: 16 to 18

Ingredients:

1 tablespoon of ground flaxseed

3 tablespoons of warm water

½ cup of coconut butter, melted

½ cup of organic cane sugar

2 teaspoons of vanilla extract

1 tablespoon of agave nectar

½ teaspoon of baking soda

Pinch of salt

3 teaspoons of tapioca starch

1 cup of oat flour

¾ cups of blanched almond flour

1/3 cup of vegan chocolate chips (more if needed)

Instructions:

Preheat your oven to a temperature of 350°F and place a piece of parchment paper on the bottom of a square baking pan – grease it with cooking spray.

Combine your flaxseed and your water in a large bowl and let it sit for 5 minutes.

Add your coconut butter and sugar as well as your vanilla extract and agave – stir it until it is combined well.

Stir in your baking soda and salt as well as your tapioca starch then stir in your chocolate chips.

Add your oat flour and almond flour to the wet ingredients and stir it until it forms a thick dough.

Spread your batter in the prepared pan and sprinkle with extra chocolate chips, if desired.

Cook the blondies for between 15 and 20 minutes until the edges are golden brown.
