To the same pan, add the remaining 1 tablespoon of olive oil and heat over medium-high heat then add the onions and cook, stirring occasionally, for 5 minutes.

Add in the sliced red bell pepper and cook an additional 3 minutes.

Add in the garlic and cook for 2 more minutes, stirring frequently.

Add in the cilantro and return the partially cooked shrimp to the pan.

Add in the tequila, lime juice and salt, then bring to a simmer and cook for 2 minutes.

Remove the pan from the heat and immediately whisk in the sour cream.
