• Put 2 cups of spring greens on a serving plate or individual serving bowl. Top with half of the sliced mushrooms, sliced hearts of palm and toasted almonds.

• Arrange 1/2 cup of canned mandarin orange wedges around the serving plate and sprinkle with 1 tablespoon sliced green onions and 1 tablespoon dried cranberries.

• Pour half of the dressing over the salad and serve immediately.

Makes 2 servings.

Homemade Orange Tarragon Dressing

Ingredients:

1/4 cup extra virgin olive oil

1/4 cup flaxseed oil

1/2 cup apple cider vinegar

1/4 cup fresh orange juice

1 teaspoon liquid honey

1/8 teaspoon freshly ground black pepper

1/2 teaspoon fine sea salt

1/2 teaspoon onion salt

1 teaspoon dried tarragon
