115 g/1 stick butter, softened

115 g/½ cup plus 2 tablespoons caster/ granulated sugar

2 eggs, beaten

85 g gluten-free self-raising flour plus 1 teaspoon baking powder OR

¾ cup gluten-free all-purpose baking flour plus 2 teaspoons baking powder and ¼ teaspoon xanthan gum

1 teaspoon bicarbonate of soda/baking soda

60 g/¾ cup ground almonds

80 ml/⅓ cup buttermilk

grated zest of 2 lemons

100 g/1 cup blueberries

3 tablespoons cream cheese

freshly squeezed juice of 2 lemons

3 tablespoons icing/ confectioners’ sugar
