Teas (if eaten)
Snack made with special bread such as sandwiches filled with cucumber or tomato slices. Either cake or buns made with special flour (see recipes).
Dinners
Either rice or potatoes (boiled, roast, chipped or baked) and one or two green vegetables, lightly cooked, (kale, cabbage, broccoli, green beans, peas etc.) Also have grilled, roasted or casserole-cooked meat of some kind; or fresh fish (grilled, steamed, fried or casseroled).
GENERAL CONSIDERATIONS
You should eat at least one or two large helpings of ‘greens’ every day and a mixed salad, plus some fresh fruit. Include at least two portions of high-protein food such as meat or fish. The main starches should be potatoes and rice, topped up with special bread, pastry and cakes. If the last three cannot be afforded then the amount of rice and potatoes should be increased, otherwise there could be a sudden weight loss which may be difficult to regain.
If loss of appetite results in an unbalanced diet, it is a good idea to supplement with extra vitamins and minerals. As the ordinary kind will almost certainly have wheat- or gluten-containing fillers in their composition, special ones will have to be taken. The following products are gluten-free and wheat-free and are designed specially for people on exclusion diets who need to supplement their diet:
Trufree vitamins and minerals.
(The most likely occurring deficiency in a diet low in grains will be B-complex vitamins: B1, B2, B3, calcium pantothenate, B6, inositol, choline, B12, folic acid, PABA and biotin.)
Snacks should only be eaten if there is no danger of becoming overweight. Plain nuts, fresh fruit, carrot sticks, dried fruit and special biscuits and buns can be eaten. Children should be encouraged not to eat junk snack foods such as candy and chocolate bars, crisps, etc.
