300ml buttermilk or plain yoghurt

a splash of milk

3–4 skinless and boneless free-range chicken breasts, each cut into 6 or 7 pieces

100g plain flour

¾ teaspoon sea salt

½ teaspoon ground white pepper

½ teaspoon freshly ground black pepper

½ teaspoon celery salt

½ teaspoon cayenne pepper

½ teaspoon paprika (hot if you want it spicy)

150ml olive oil (you may need a spot more by the time you cook the last batch)

400ml chicken stock
