Artichoke Florentine

Ingredients:

Globe Artichokes

Whole pepper

Mace

The marrow of 2 large bones

6 egg yolks, hard boiled

Candied orange and citrus

Green gooseberries or grapes

Vinegar

Sugar

Eggs

Method: First boyle your Heartychokes, then take as many Bottoms as will cover the dish, then throw in a little whole pepper & mace with the marrow of 2 large bones, the yolkes of 6 eggs boyld hard & cut small with some candied orange & Citron. And when you have ’em, green Goosberries or Grapes to place ab’t the edges. Then bake it & when it comes out of the Oven, make a Cawdle of Vineg’r, sug’r & eggs & put into the Dish.
