Black olive & sun-dried tomato tapenade

This intensely tasty mahogany-coloured paste is delicious spread on fresh warm polenta bread, toast or bruschetta – and can also be eaten with slices of grilled polenta. Containing some potentially fairly costly ingredients, it could be regarded as the vegetarian equivalent of caviar. Luckily, a little goes a long way, and this tapenade is quick to whizz up to make appetizers for impromptu gatherings. When shopping for your olives, choose the ones preserved in olive oil if possible; otherwise, good-quality pitted Kalamata olives preserved in brine will do – and are what we use at the College. Semi-moist sun-dried tomatoes such as you find in a delicatessen can be used instead of dried ones, but you’ll need almost double the weight.
