Ingredients
1 tbsp olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 celery stick, finely chopped
4 garlic cloves, finely chopped
500g minced beef
1 tbsp tomato purée
400g tin chopped tomatoes
400ml beef stock (made from a stock cube)
400g spaghetti
salt and pepper
Method
Put a lidded frying pan on a medium heat and add the olive oil, onion, carrot and celery and cook them for 10 minutes until soft. Add the garlic and continue to cook for a further 2 minutes.
Add the mince and break it up in the pan as it cooks to make sure there are no big lumps. Season to taste with salt and pepper and cook until the meat is brown.
Stir through the tomato purée for 30 seconds and then add the tomatoes and stock and give everything one final stir.
Put on the lid and let the mixture simmer for at least 1 hour. The longer you cook it the better it gets. Keep your eye on it to make sure nothing sticks to the bottom of the pan, and give it a stir periodically, topping up with more stock if necessary.
After an hour, bring a saucepan of salted water to the boil. Add the spaghetti and cook until tender, then drain. Now youâre ready to serve the spaghetti topped with the bolognese.
