Method:

• First, bring your barbecue to a medium heat.

• Next, make the rub. Mix all of your dried herbs, spices and seasoning's together in a bowl.

• Coat the outside of your sea bass with olive oil, then coat the fish with the spice rub. Massage the spices into the skin of your fish.

• Oil the bars of your barbecue to stop the fish sticking. Place your fish on the grill and cook for 10 minutes on each side, or until all the meat is white and flaky.
