Fat Man’s Quinoa and Chunky Marinara

2 cups quinoa

4 cups water

1 large onion

1 green pepper

1 8oz pkg sliced mushrooms

1 29oz can tomato puree

2 Tbsp. onion powder

1 Tbsp. oregano

1 Tbsp. basil

1 Tbsp. parsley

2 tsp. garlic powder

2 Tbsp. Bragg’s liquid aminos or salt to taste (optional)

Instructions:

Add 2 cups of rinsed quinoa and 4 cups of water to a sauce pan and cook on med/high covered until water is evaporated. In a non-stick pan sauté (no oil need) on a med/high heat onion, pepper, and mushrooms covered until softened. Add spices, liquid aminos, and tomato puree to the softened veggies. Continue to heat for about 5 minutes then add in the cooked quinoa. Stir thoroughly and serve.

Serves at least 6.
