Barbeque Whole Baked Chicken (serves 6 people) Prep Time: 10 min. Cook Time: 45-60 min.

1 whole baking chicken, completely thawed, rinsed and gutted

GF barbeque sauce

Salt & pepper to taste

¼ cup water

Preheat oven to 350 degrees. Spray large roaster pan with non-cook cooking spray. Place chicken in clean kitchen sink. Sprinkle salt & pepper inside chest cavity. Place chicken in roaster pan. On top of chicken, use fingers to slightly separate skin from meat (making a space). In the space between the skin and meat, squirt barbeque sauce, then replace skin to keep sauce in place. Squirt barbeque sauce inside cavity, then on top of the chicken, spreading it around to coat chicken. Pour water in bottom of pan. Put lid on pan and bake for 45-60 minutes or until chicken reaches 180 degrees internally. Be sure chicken isn’t pink.

OPTIONAL: serve with sweet potatoes, mashed or baked potatoes and/or salad.
