To make the gnocchi:
In a large bowl, mix the ricotta, eggs, Parmesan cheese, salt, and flour with a spoon until just incorporated into a soft dough. Do not overwork the dough or your gnocchi will become tough.
On a well-floured work surface, shape the dough into two ropes that are 1 inch (2.5 cm) in diameter and about 18 inches (46 cm) long (see photos 1 and 2 on this page). Use the back of a floured butter knife to cut the ropes (see photo 3 on this page) into 1-inch (2.5-cm) pieces. With the tip of your index finger, make a small indentation in each gnocchi (see photo 4 on this page)—this will allow the gnocchi to best grab hold of the sauce.
Bring a large pot of salted water to a boil. Add the gnocchi in small batches and boil each batch for 2 to 3 minutes, until they float to the top. As the gnocchi are cooked, remove them with a slotted spoon and place in a colander to drain.
