There’s such a wide choice of mushrooms now. Find tightly closed baby white button mushrooms for this dish. The marinated mushrooms will keep for several days if refrigerated. They are excellent for serving at barbecues, with cold meats and even as a predinner snack with drinks.

500g button mushrooms

2 tbsp chopped fresh parsley

2 tomatoes, skinned and chopped

2 tbsp lemon juice

zest of 1 lemon

¼ cup olive oil

2 cloves garlic, crushed

1 bay leaf

Wash or wipe the mushrooms well. Place them in a small, heavy-bottomed saucepan, adding all the other ingredients.

Bring to the boil, cover the pan and turn down to a gentle simmer. After about 15 minutes, tip the mushrooms into a clean jar, allow to cool, and then refrigerate until needed. Serve at room temperature.
