Prime Time Stuffed Peppers

8 Prime Time bell peppers

(red, yellow, orange or green)*

1 1/4 teaspoons salt, divided

1 teaspoon ground black pepper

3 cups cooked rice

1 15-ounce can black beans, drained and rinsed

1 11-ounce can corn, drained

1 medium onion, peeled and chopped

1 cup chopped walnuts

1 4-ounce can diced green chiles

1/2 teaspoon smoke-flavor seasoning

1/2 teaspoon ground cumin

1/2 cup (2 ounces) shredded Monterey Jack cheese

(or Jalapeno Pepper Jack)

Preheat oven to 350degF. Cut thin slice from one side of peppers; remove seeds and membranes; rinse. Cook peppers 5 minutes in boiling water to cover. Drain. Season insides with 1 teaspoon of the salt and the pepper. Combine rice, beans, corn, onion, walnuts, chiles, smoke-flavor seasoning, cumin and remaining salt in a medium bowl. Spoon 1 cup rice mixture into each pepper. Stand upright in 9-by-13-inch baking pan. Cover with foil and bake 20

minutes. Remove foil, sprinkle peppers with cheese and cook another 5 minutes, or until cheese has melted. Makes 8 servings.
