Lean Turkey Breast in Honey-Sherry Baste

Ingredients
3-3½ lbs. skinless boneless turkey breast rinsed and pat-dried
Baste:
½ Cup pure honey
1 Tablespoon butter
¼ Dry sherry
Juice of 1 lemon
1 Tablespoon salt
Preparation
Whisk together honey, butter, and sherry in a small saucepan over a low heat just until butter is melted and well combined.
Remove from heat and stir in lemon juice and salt, then allow cooling.
Place turkey breast and baste in a large re-sealable plastic bag then seal it. - Refrigerate for at least 6 to 8 hours.
Pre-heat it to 225°F.
Smoke for about 4 hours or until internal temperature reaches 170°F.
Remove from heat and let rest for 10 min before serving.
