Carrot soup

Preparation / cooking time 35 minutes

Serves 4

Ingredients

4 sliced carrots

1 yellow onion, chopped

2 garlic cloves, chopped

1 tbsp. Peeled ginger

1 tbsp. curry paste

3 cups vegetable broth

1 cup coconut milk

1 tbsp. lemon juice

2 tbsp. minced cilantro

Salt to taste

Directions:

In a pot we sauté the onion until it is soft, with water.

We add the ginger, curry paste and garlic and cook until well combined for about 1 minute.

We add the carrots, stock, lemon juice to the pot and bring it to a boil for about 5 minutes and then reduce the heat and let it simmer for about 20 minutes.

Using a blender we puree the soup, steering the coconut milk and season with salt.

We serve while warm topping with fresh thyme leaves.
