TO MAKE THE GREENS

1. In a small bowl, whisk together the olive oil, vinegar, mustard, garlic, salt, and pepper.

2. Put the microgreens in a large bowl. Pour the vinaigrette over the greens and toss to combine. Arrange some of the greens on each plate, top with sliced steak, and serve.
