Prep

Leaving skins on, cube sweet potatoes. Finely chop shallots, parsley, rosemary, and green onions. Cut lemons into wedges.

Cakes

Boil sweet potatoes for fifteen minutes or until tender. Drain and mash in large bowl. Add drained salmon, shallot, parsley, rosemary, green onions, cornmeal, salt, and eggs. Mix well. Shape mixture into palm-sized patties (about 2 inches in diameter).

In large skillet, preferably iron, heat oil over medium-low heat. Add patties, and cook until undersides are slightly golden (about three minutes per side). Use wide spatula to flip patties.

Serve

Serve salmon cakes over bed of greens with lemon wedges.
